Glass Noodle Salad with Tomatoes, Bacon and Egg Pancakes
Another recipe for a glass noodle salad. A different preparation method can be found here: glass noodles with chicken fillet and vegetables. The dish is filling and can easily become a full meal. Ham can be used as an alternative to bacon (it does not require frying). This amount of ingredients makes 5-7 servings.

Instructions
Step 1 of 12
Cut the bacon into strips.
Step 2 of 12
Fry in a pan without using oil.
Step 3 of 12
Beat each egg separately.
Step 4 of 12
Lightly grease the pan with oil. Fry the egg pancake on one side.
Step 5 of 12
Flip and fry on the other side.
Step 6 of 12
Let the pancakes cool. Cut them into strips.
Step 7 of 12
Cut the tomatoes into small pieces.
Step 8 of 12
Finely chop the greens.
Step 9 of 12
Prepare the glass noodles according to the package instructions. I poured boiling water over them for 5 minutes.
Step 10 of 12
Rinse the noodles in cold water. If desired, they can be cut.
Step 11 of 12
Combine the glass noodles, bacon, egg pancakes, tomatoes and greens. Salt and pepper if necessary.
Step 12 of 12
If desired, the salad can be dressed with vegetable oil; I did not do this because the fried bacon became juicy, which was enough to keep the dish from being dry.
