Instructions
Preparing the marinade
Step 1 of 15
Grate the ginger on a fine grater (2 tsp will be needed).
Step 2 of 15
Zest the oranges.
Step 3 of 15
Squeeze out the juice (150 ml will be needed).
Step 4 of 15
Combine the soy sauce and juice.
Step 5 of 15
Add the zest.
Step 6 of 15
Add the ginger.
Step 7 of 15
Add the garlic. Pepper it.
Step 8 of 15
Mix well.
Step 9 of 15
Place the duck in the marinade (it is recommended to use a small container so that the marinade does not spread and covers the meat as much as possible). Leave it in the refrigerator for 4–6 hours, periodically turning the bird.
Step 10 of 15
Remove the duck from the marinade. Pat dry at room temperature (this is important for achieving a beautiful crust). I fixed the duck on a bottle of water. Leave it for 1–2 hours.
Preparing the filling
Step 11 of 15
Peel and slice the orange.
Step 12 of 15
Remove the core from the apples and slice them.
Step 13 of 15
Mix the sliced oranges, apples, and cranberries.
Step 14 of 15
Fill the duck with the filling.
Step 15 of 15
Sew the opening or secure it with toothpicks. Put it in the oven. Bake at a temperature of 180 degrees for 2–2.5 hours.
