Cake with Fruits, Jelly and Buttercream

Any berries and fruits can be used for this recipe: fresh, from compote or frozen. If using the latter, do not forget to drain all the liquid. If you do not have special confectionery jelly on hand, you can use any other, reducing the amount of liquid during preparation by 50 ml relative to the instructions on the package.

Ingredients

for 6 servings

  • butter 50 g
  • eggs 2
  • sugar 50 g
  • baking powder 1 tsp
  • flour 150-200 g
  • cream 33-35% 50 ml
  • cream cheese 150 g
  • sugar 50 g
  • any fruits and berries
  • cake jelly 10 g

Instructions

Preparing the dough

Step 1 of 17

Cream the butter and sugar.

Step 2 of 17

Add the eggs and mix.

Step 3 of 17

Add the flour and baking powder, then knead the dough.

Step 4 of 17

Grease with butter or line a baking pan with parchment paper (the author used one 27 cm in diameter and 3 cm high). Place the dough inside, forming edges.

Step 5 of 17

Place baking paper on top of the dough.

Step 6 of 17

Pour in beans or peas, leveling them (this will ensure even baking and preserve the shape of the crust). Place in an oven preheated to 180 degrees. Bake for 20 minutes. After that, remove the beans (they can be reused).

Step 7 of 17

Allow the finished crust to cool.

Preparing the cream

Step 8 of 17

Whip the cream with sugar.

Step 9 of 17

Add cream cheese and mix.

Step 10 of 17

Spread the cream over the cake layer. Refrigerate for 1 hour.

Step 11 of 17

Place berries and fruits on top of the cream layer. The author used: grapes, cut into 2 parts;

Step 12 of 17

kumquats (small citrus fruits similar to oranges), sliced into rounds;

Step 13 of 17

kiwi, sliced;

Step 14 of 17

strawberries, sliced;

Step 15 of 17

blueberries.

Step 16 of 17

Prepare the jelly according to the package instructions. Carefully pour the warm jelly over the fruit. It is recommended to first apply a thin layer and wait for it to set, then pour the remaining jelly — this prevents the cheese from running and the fruit from floating.

Step 17 of 17

Leave in the refrigerator until completely set (for 3–4 hours, preferably overnight).
