Georgian Chakhokhbili
Chakhokhbili is a well-known dish of Georgian cuisine, consisting of tender pieces of chicken in a spicy sauce. It is incredibly delicious! I recommend using a whole chicken (instead of separate parts like fillets or thighs) and exclusively fresh tomatoes (tomato sauces and paste are not suitable here). Rice or potatoes would be excellent as a side dish.

Instructions
Step 1 of 17
Cut the chicken into pieces.
Step 2 of 17
Slice the onion into half-rings.
Step 3 of 17
Finely chop the garlic.
Step 4 of 17
Peel the tomatoes (to make this easier, you can dip them in boiling water for a few seconds). Finely chop them.
Step 5 of 17
Chop the greens.
Step 6 of 17
Heat a sauté pan or frying pan. Add the chicken (it is important not to add oil). Brown on one side.
Step 7 of 17
Flip and brown on the other side. Since I used a not very wide sauté pan, browning was done in batches.
Step 8 of 17
Gather all pieces in the sauté pan. Leave on minimum heat (so the chicken does not cool down).
Step 9 of 17
Sauté the onion in butter until golden brown.
Step 10 of 17
Add the sautéed onion to the chicken.
Step 11 of 17
Add the tomatoes.
Step 12 of 17
Stir and increase the heat. Stew for 20 minutes.
Step 13 of 17
Add the garlic.
Step 14 of 17
Add salt, red pepper, and khmeli suneli.
Step 15 of 17
Stir. Stew for 10 minutes.
Step 16 of 17
Add the greens.
Step 17 of 17
Stir. Stew for 3–5 minutes.
